A culinary tour of Lebanon awaits diners at Atlantis, The Palm’s Ayamna, specially created by the Ayamna Executive Chef Ali El Bourji. Chef Ali’s Table, a brand-new lunch concept with weekly alternating menus takes place every Friday from 1-4 p.m. Each set menu for adults costs AED195 ($53), children ages 5-10 for AED 98, and kids under five go for free.
“Chef Ali’s table highlights the different tastes of Lebanon, from mountain, north, south and the capital Beirut. Each week features a delectable selection of traditional cold mezze, hot mezze, baked goods, main courses and desserts with special dishes originally sourced from the featured regions to bring alive the different tastes of Lebanon. I wanted to give my guests a modern interpretation of the Lebanese legacy and authenticity by representing the finest dishes sourced originally from the four regions of Lebanon,” said El Bourji.
First Friday of every month is the Mountain of Lebanon week. The mountain region is well known for perfect climates to grow the finest vegetables and fruits in the Middle East.
Second Friday of every month is the North of Lebanon week. The north features a long coast line and is famous for fuller foods such as Kebbah Sajiyeh, as well as an amazing selection of seafood.
Third Friday of every month is the South of Lebanon week. The south is famed with its climate to produce herbs and wheat, moreover it carries a high reputation for its virgin olive oil, Saj bread and Frakeh.
Fourth Friday of every month is the Beirut week. The capital Beirut, the multinational city has an exceptional blend of food inspired from different flavors.
El Bourji is currently responsible for managing the daily operations of the Arabic kitchen at Ayamna, as well as overseeing the Oriental Food department of the resort, which includes catering, and recruiting and training new culinary team members.
His role also extends to menu planning and costing, quality assurance, and budgeting in addition to managing the kitchen of Asateer, one of the largest Ramadan tents in the UAE serving iftar and suhoor to over 60,000 guests during the course of the holy month.
